Once the coach tours leave around 6pm the Casco Antiguo goes quiet, the Aqueduct lights up, and the asadores fill with Segovianos rather than day-trippers. If you are staying overnight, stay inside or immediately outside the walls; the 2 km walk uphill from Guiomar after dinner is not what you want.
The season nobody expects is late January and early February, when Zamarramala's Fiesta de Santa Águeda (declared of national tourist interest) sees the women of the village take over the town for a day — book six weeks ahead. And the area people wrongly skip is San Marcos, the valley below the Alcázar: it is a 10-minute climb back up but the views looking up at the castle from your window are the ones on the postcards, and rates run €20–€30 below the equivalent inside the walls.

The Judería, immediately south of the Cathedral, is quieter, mostly boutique conversions of old Jewish quarter houses, and runs a similar price. San Millán and San Lorenzo, just outside the walls to the north and east, drop you to roughly €70–€110 for three-star and guesthouse rooms while keeping the Aqueduct a 15-minute walk away.
For something rural, La Granja de San Ildefonso and Valsaín sit 11 km east under the Sierra de Guadarrama and suit anyone pairing the palace gardens with hiking; expect €80–€140 in casas rurales. Pedraza, Sepúlveda, Turégano, Cuéllar, Coca and Ayllón are the walled villages 40–100 km out — cheaper (€60–€100) but you will need a car.
